Toss some Yee Sang this year

 

 

Royale Chulan Seremban chef Chai Keng Hui, aka Chef Jack, did not invent the popular Chinese New Year dish Lo Hei Yee Sang, that honour apparently goes to another Seremban man, Loke Ching Fatt, who revitalised the old Yusheng dish in the 1940's to what it is today, but that's another story.

 

Of course I never got to taste Like Ching Fatt's version, which changed and adapted over the years  before Singapore claimed it as their dish, but the Yee Sang Chef Jack made for a group of taste testers at The Royale Chulan Seremban recently was very indulgent.

 

Like all great dishes it is not complete without having a taste highlight and for me it was the sauce. Chefs, like journalists, never reveal their sauces so I can only say for me it was a taste I  kept going back for, that sweet and tangy sauce, covering a crispy slices of salmon skin and a host of other ingredients.

The hotel will offer 5 varieties of Yee Sang this Chinese New Year from January 6, 2019 with Vegetarian, Salmon, Clam, Abalone and Soft-shell crab options.

 Chef Jack tosses the noodles, a traditional way of wishing good things whilst tossing the food.

 

There are also of course some wonderful set-menu dishes on offer including the Prosperous and Happiness Fatt Choo, Wealthy and Healthy Family, and Fortune and Wealth Reunion menus priced at 10 persons per table from RM1,288 nett to RM1688 nett.

 

It would be impossible to taste and describe all the dishes on the set-menus but  the ones on offer were top class, Steamed Tiger Grouper with chicken essence,  Hu Nam style Herbal Chicken Drumstick, Lotus Rice with Smoked Duck and Oysters, Steamed Village Chicken with Tong Kwai and Cordyceps Flower, Baked King Prawns with crispy garlic sauce, Braised dry seafood with pumpkin, Steamed Glutinous rice with Lobster and Chilled Mango Sago with Pomelo.

That's only a third of the dishes offered on the three set menus and honestly, I could have eaten the Chilled Mango Sago with Pomelo dessert for hours, it was that delicious.

The set menus will be available on the 4th Feb - 6th Feb with lunch at 12 noon - 2.30pm and dinner from 6pm till 10pm.

There are also a la carte dishes and Dim Sum available at the Han Pi Yuen restaurant, one of Serembans finest Chinese Halal restaurants, available on the 5th and 6th Feb from 10am - 2.30pm.

 

To add to that a Lion Dance performance will take place at 12.30pm on the 14th Feb in the lobby entrance with all  welcome to come along and watch.
